This dish which is as popular as the Mauritian Fried Rice is a MUST try for any Mauritian Food Lovers.

 

It may be as street food or even ordered in the restaurant, this dish is an easy and delicious way to satisfy the envy of a good, quick and typical Mauritian Food.

 

This dish is similar to the Mauritian Fried Rice except for the fact that instead of using rice, we will be using egg noodles for this recipe.

 

The dish is basically stir fry noodles topped with ingredients that are all well-seasoned with Chinese dark and fish sauce. It is a re-invented Chinese dish that can be made within minutes and all the ingredients needed are very simple.

 

What makes the Mine Frite Unique?

 

Fried noodles are a very popular dish with Mauritians and also with tourists. It is not only easy to prepare but is also delicious and if you want to, you can cook the noodles and prepare all the ingredients in advance, then keep them in the fridge until you’re ready to cook. The dish is so colorful and so unique.

Mine Frire

Ingredients:

 

For the Chicken:

2 Fillets skinless boneless chicken breast cut into cube 

salt to taste

black pepper

1 tbsp dark soy sauce

1 tbsp oyster sauce

1 tsp rice wine vinegar

1 tsp fish sauce

1 tsp sesame oil 

oil for cooking

 

Fried noodles:

Oil for cooking

1 Portion of noddle 150 g ( For 1 serving )

1 Handful of shredded cabbage

1 handful of carrot cut into matchsticks

Spring onion

Some  Garlic chives (la queue l’ail)

2 eggs (optional) For garnishing

1 Tbsp Dark soy sauce

2 Tbsp Oyster sauce

1 Tsp of Rice wine vinegar

2 Tsp of Fish sauce

1 Tsp of Sesame oil

 Black pepper 



Recipe:

 

In a wok or frying pan heat 2 tbsps of oil.

Add the cubed chicken then the salt and pepper to your taste

Sauté until completely cooked through on a medium to high heat

Add Soy Sauce, Oyster Sauce, Sesame Oil, Fish Sauce and Rice Wine Vinegar and continue cooking for another 1-2 minutes until most of the liquid has be absorbed by the chicken

Remove from the pan and set aside

 

In the same pan heat another 2 tbsps of oil on a medium to high heat

Add the carrot, shredded cabbage, garlic and chives. Fry for 1 minute.

Add your noddles (150g per serving) and stir-fry for 1 minute

Add Soy Sauce, Oyster Sauce, Sesame Oil, Fish Sauce, Pepper, and Rice Wine Vinegar and continue cooking for another 1-2 minutes

Add a handful of chopped Bok Choi, Spring Onions and the previously cooked Chicken.

Heat through and serve.
