SALT of Palmar

SALT of Palmar on the east coast near Palmar is the island's most explicitly sustainability-focused resort, a property that has built its entire model around the idea that luxury travel need not come at the expense of the environment, the community, or the guests' own values. The resort is compact — just 56 rooms — and designed with an almost monastic clarity: whitewashed concrete, local wood, and the kind of considered minimalism that makes a room feel expensive despite (or because of) the absence of decoration for its own sake. The beach at Palmar is wide, pale, and faced by a lagoon whose shallow water stays clear and warm year-round. The food programme is the most farm-to-table of any Mauritian hotel: the kitchen maintains a relationship with 30 local farmers and fishermen, the daily menu is written by whoever arrives at the kitchen door first, and guests are invited to join the market run twice weekly. The SALT restaurant's signature dish changes every day; the rum menu features only Mauritian producers, with seven distilleries represented. Activities are chosen for their low environmental impact and high local economic contribution: cycling through cane fields, guided reef snorkelling with marine biologist commentary, and cooking classes with village women. SALT of Palmar is for guests who want to feel genuinely good about where they are staying — and who expect the hotel to be interesting enough that the phone stays in the room.
