Perched over the turquoise waters of the east coast lagoon on a deck that extends directly above the sea, Celeste at One&Only Le Saint Géran is arguably the most dramatically positioned restaurant on the island. The setting alone — watching the sun sink behind the palms while the Indian Ocean changes colour from aquamarine to amber — would be enough. But Celeste delivers a kitchen that matches its stage: the menu is modern European with a Mauritian accent, built on the finest local ingredients treated with real intelligence and craft. Seared Mauritian lobster arrives with smoked butter and fine herbs; line-caught dorade comes with a citrus emulsion and crisp fennel; the dessert trolley, wheeled tableside, is a reminder that great French patisserie has found a permanent home on this island.
